The other day I promised I would share my favorite Taco Salad recipe. As promised – here it is. This salad is one of my favorites to eat. It is seriously so good, dare I say the best Taco Salad. Let’s get to it, here’s what you need…
Ingredients:
– 1/4 head of green cabbage, finely shredded
– 1 romaine lettuce heart, finely shredded
– 1 avocado, diced
– 1 tomato, diced
– 1/2 can black olives, sliced
– 4 green scallions, diced
– 2 cups ground beef taco meat, recipe found HERE
– 1 cup shredded cheddar/monterey jack cheese
– small handful cilantro, chopped
– sour cream, fat free or light
– spicy ranch dressing or taco sauce to top your salad
– crushed tortilla chips {optional for garnish or to toss in salad}
This recipe yields 2 large salads.
In a large mixing bowl combine both your cabbage and romaine lettuce. Toss in your olives, tomatoes, avocados, cilantro, cheese, and half your scallions. Toss in crushed tortilla chips if you wish, or serve on the side.
Place half your salad mix in a large personal size salad bowl. Top with half of your ground beef taco meat. Add sour cream, and top with your favorite spicy ranch dressing or if you like to keep it lighter you can add salsa. I prefer to add taco bell mild sauce, you can find it at walmart now in a bottle. Repeat all for your second salad bowl.
Garnish with remaining green scallions over top of the sour cream.
